Mixing Diatomaceous Earth with Your Wheat

The following account of how to mix DE with your wheat was forwarded to me by a friend, and is therefore in the personal form of a letter. I leave it as is. I don't know the author.

"Bill, here’s how to do it. But first let me address the issue of safety. I do not have permission from any government agency concerning the following claims.
Food grade DE has been approved by the USDA & FDA for use as a feed additive. CFR # 1573.340©. How safe is it for human consumption? You have to do an end run around the government, since agencies are not in the business of studying safe, natural alternatives; the chemical manufacturers will ensure this, IMO. You can’t patent the second most plentiful element on earth.
Food grade DE that I’m discussing is mined out west by DR Mining and consists of: Silicon Dioxide(85%), other elememtal oxides(10%) and moisture(5%). I researched Silicon Dioxide and found that this element is used throughout the food industry as an anti-caking agent in products like granulated salt, non-dairy creamer, dried milk, cheese products, herbs and spices, dried egg products, powdered sugar, cake mixes, drink mixes, etc.  I’ve been hearing about the safety of DE (make sure it’s food grade, not the filter grade) for years, and now I’m convinced. Do a web search on silicon dioxide and you’ll see. You’ll also learn how integrated circuits are made - how ironic.
Anyway, here’s how you treat stored grains. Use one bucket for mixing. Fill it about half way with grain, add DE and mix well. Pour this into bucket being used for storage and continue to add from mixing bucket until full.  The recommended rate is up to 2% DE by total weight, so a 50 # bag will treat over a ton of grain. This may be a little overkill; all you want is a light coating on each kernel. A half cup per 50# is about right. When it’s time to eat, you can rinse off DE with clean water if you’d like, but you don’t need to. It won’t hurt you. In fact you’ll be getting 14 minerals found in DE, I’ve also heard that nutritional companies are going to be packaging DE in pill form. Awesome stuff, this diatomaceous earth.
take care all
 Lee"

NOTE: Subsequently to posting this to our page a very informed individual alerted me to the fact that DE can be very dangers to humans if it is breathed into the lungs. I therefore advise all those using it to take the greatest precautions if they choose to use this substance. It is safe to ingest, etc., but it is very detrimental to be breathed into the lungs. I don't remember who this individual was, be he appeared to us to be very informed, holding a responsible station in a related industry. HHR

A Successfull Whole-Wheat Bread & Roll Recipe
Note: This recipe was formerly posted with an error which would prove to be disasterous to any attempting to make bread from it, for which I profusely apologize. It has been corrected, so please don't hesitate to give it another try!

Mix:
2 3/4 c. warm water
31/2 c. whole wheat flour
1/8 c. honey
1/8 c. molasses
1/8 c. oil
Then add:
1 ½ heaping TBSP. yeast

Let set for 10 minutes to sponge. Mix down, and add:
1 TBSP. salt
1 TBSP. lecithin or natural dough enhancer (optional)

Then knead in  approximately 3-41/2 more cups of whole wheat flour, or until the dough is soft and stretchy, but not tough. Form loaves, and let rise for twenty minutes in a 120F oven, or in a warm place covered with a damp cloth. When it has sufficiently risen, close your oven door, and turn the oven up to 350F. Bake for approx. 27 minutes, or until golden brown. Butter the tops, and let the loaves cool wrapped in a damp cloth (this will soften the crust tremendously.) Makes two loaves. Now, cut a slice, and enjoy!

Use the same dought to make French Bread, Pizza Crust, or Bagels

You can also make French Bread ( I often use yogurt instead of water for French Bread, as it gives it a slightly sour flavor, but I use around 31/2 c. yogurt instead of 23/4 c., as it is thicker), rolls, or pizza crust out of this dough, by adjusting rising and baking times.  Makes two French Bread loaves or around twenty rolls and I’m not sure how many pizza crusts, but around four.

To make bagels, roll out the dough to about 1 inch thickness, then take a large cup and cut out circles of dough, then cut out the middle with a very small cup or bottle or a baby bottle lid. Boil 2 quarts of water in a pan and bring to a boil. Add 2 tablespoons of honey to the boiling water, and mix in, or let it boil in. Drop bagels into the water, and let cook approximately 1 minute on each side. Remove and place on greased cookie sheet. Then bake in oven at 350 degrees until golden brown, approximately 15 minutes.
